Gravy ingredients:
– 7 cloves of shallots
– 4 cloves garlic
– 7 curly red chilies
– 2 segments kencur
– 100gr peanuts
– 250gr sweet potato (peeled)
– 2 sticks of lemongrass
– 5 bay leaves
– 1 liter air
– Brown sugar 2 small blocks / 80gr
– 2 tsp salt
– 1/2 tsp flavoring
– 2 tbsp cornstarch
– Sufficient cooking oil
Complementary ingredients:
– Yellow noodles
– Bean sprouts
– Boiled eggs
– Fried onions
– Celery leaves
– Green cayenne pepper
How to make slime noodles typical of the Riau archipelago
First, fry the shallots, garlic, curly red chilies, kencur for a while until fragrant.
Then, grind the spices, set aside. Return to the fried peanut puree, and set aside.
Puree the steamed sweet potato, set aside. Saute ground spices, add lemon grass and bay leaves. Sauté until fragrant. Enter the water.
Add finely chopped peanuts. Then, steam the sweet potato until smooth. Then, add brown sugar, add salt and seasoning. Stir well.
Cook until the gravy boils and mix in the cornstarch solution, stir evenly. Enter while stirring.
