For an omelet to be successful in a pub, the recipe needs to go beyond the basics. At the carioca Bar do Tino, cook Elani Santana combines two types of cheese — parmesan and curd — in abundance.
The order, called “vixe mainha”, gains more color with green smell (a mixture of parsley and chives) and oregano. The step by step was shared with Teresa Cristina, who shows her skills to the public in the episode of “Botequim da Teresa” with guest Fabi Alvim, Olympic volleyball medalist.
In addition to the different omelet, Bar do Tino bets on generous portions of roasted meats. Those who want to taste the specialties arrive at the restaurant hungry.
Located in Morro dos Prazeres, above the bohemian neighborhood of Santa Teresa, the house has one of the highest views in the favela. To get there, tourists take a ten-minute trail through the woods.

INGREDIENTS
- 2 eggs
- 1 teaspoon green chives (parsley and chives)
- 1 tablespoon grated Parmesan cheese
- 100 grams of grated curd cheese
- Salt and oregano to taste
- 1 tablespoon of olive oil
PREPARATION MODE
Beat the eggs for two minutes in a bowl with a fork. Add the green smell, parmesan cheese, curd cheese and salt and oregano to taste. Mix.
Grease the fridge. “Spread the oil with a brush or paper towel so the omelet doesn’t stick.”
Add the mixture and wait for it to brown underneath. “To see the point, look at the edge. You can’t let it burn, but it should be toasted.”
When firm, turn the omelet to the other side. Once you reach the point, sserve with salad leaves, boiled vegetables, tomato and olives.
