Korean marinated beef – Bulgarian
Main course for 4 persons
Preparation time: about 15 minutes + marinating
Ingredients:
- 500 gr. entrecote
- 1 peer
- 3 cloves of garlic
- 1 tablespoon ginger
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons sesame oil
- 1 tablespoon gochujang (Korean red pepper paste) + optional extra for serving
- neutral oil
Additional supplies:
Korean dipping sauce – Yangnyum kanjang
Sauce for 4 people
Preparation time: about 5 minutes
Ingredients:
- 1 teaspoon sesame seeds
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon Chinese black bean sauce
- 2 tablespoons rice wine or dry sherry
- 1 teaspoon sriracha
- 2 teaspoons sugar
- 2 tablespoons of water
- 1 spring onion
- 1 clove of garlic
Korean side dishes – Banchan
Side dish for 4 people
Preparation time: about 20 minutes
Ingredients:
- 300 gr. short grain rice (sushi or dessert rice)
- 1 garlic clove
- 1 tablespoon sesame seeds
- 1 tablespoon sesame oil
- 1 crop sla
- 400 gr. Spinach
- 200 gr. kimchi
- 100 gr. bean sprouts
Short and hot fried meat
Step 1: cut the sirloin steak into wafer-thin strips. This works best when the meat has just come out of the fridge. The cooler the meat is, the firmer it is, making it easier to cut.
Step 2: peel and grate the pear. The pear will serve as a marinade for the sirloin steak. Also peel and grate the garlic and ginger. Ginger is a typical seasoning for Korean cuisine. It also makes the meat a lot more tender.
Step 3: mix with the soy sauce, sugar, sesame oil and gochujang. Place the meat in the marinade and let it marinate for at least 30 minutes. The meat may remain outside the refrigerator during this step.
Step 4: heat a dash of oil in a wok. Bake the meat over high heat for about 4 minutes, so very briefly. Constant heat is important. Turn the meat over layer by layer.
Step 5: serve with the Korean side dishes and dipping sauce (explained in the next steps).
Dipping
With this sauce it is mainly a matter of mixing ingredients together.
Step 1: toast the sesame seeds lightly in a dry frying pan.
Step 2: Mix the soy sauce, sesame oil, black bean sauce, rice wine, sesame seeds, sriracha, sugar and water in a bowl. Be mild with the sriracha as this can quickly make the sauce too spicy.
Step 3: cut the spring onion into thin rings. Peel and grate the garlic and add it to the dip.
Step 4: mix and serve.
Korean vegetable dish with rice
Step 1: cook the rice according to the package.
Step 2: peel the garlic and cut into slices.
Step 3: toast the sesame seeds in a dry frying pan until golden brown. Stay tuned, because this can go fast!
Step 4: add the sesame oil and spinach and stir fry on high heat for 2-3 minutes. The sesame oil serves more as a seasoning than it is a real cooking oil. Turn the spinach over using a pair of pliers.
Step 5: Pull the lettuce leaves from the head and put them in the pan.
Step 6: put the rice, spinach, kimchi and bean sprouts in bowls and serve with the bulgogi.
You eat this dish as follows: it’s like filling a taco. Start with the lettuce leaf and tear it in half if it’s too big. Place the tray in your hand and add a little bit of rice and place the meat on top. Then add the sauce, kimchi, bean sprouts or some more gochujang. Wrap this in a package and eat it in one bite.
